Elegant Taco Salad

This elegantly-arranged taco salad contains about 20 grams of carbohydrate--mostly from the three mini-tortillas, which were cut into halves. There are some finely diced tomatoes in the seasoned taco meat, which represent a negligible number of calories. Other components are shredded cheddar cheese and sour cream.

Beware of Hidden Monosodium Glutamate

Monosodium glutamate is a potent excitotoxin. It  is not always listed by name on food packages where it appears in stealth-form. Dr. Leonard Coldwell introduces the unsuspecting public to this dangerous food-additive in his newsletter.


Dr. Thomas S. Lee at Naturodoc cites some sources of MSG that are frequent ingredients in edible products.

Good, Old Reliable Brillo; M-J's Citric Acid Scrub

Still the most effective cleaning pads, Brillo will make your housewares look like new, when combined with a little elbow-grease. For steel wok pans in which stubborn oil and food stains persist, I have made a discovery: they will disappear quickly when you sprinkle them with a bit of granulated citric acid (available at drug stores) and a drop of oil. Mix the two ingredients by rubbing them together, which will form a bubbly paste, and scrub the pan with Brillo. The steel should now shine like it did when new. This method also works well with glass on which mineral deposits have formed.

Making Pasta for Lasagne

Egg-based "fresh pasta" is hung to dry on the handle of my stainless-steel kitchen cart, after being rolled and cut by hand. It will be boiled and set into a rectangular pan on top of a layer of meat sauce, covered with a ricotta-cheese mixture, which will then be covered with more of this pasta, on top of which will go some more meat sauce, pasta and béchamel (balsamella) sauce.

Here is the assemblage of lasagne and fillings, ready to bake:
