M-J's Spätzle-Chicken Soup


I chopped some red onion, celery and carrots, and sautéed them in olive oil. I added the other usual ingredients: chicken bits and a lot of bouillon, then a few cups of homemade spätzle that I had stored in the freezer. I created more flavour with red peppercorns and dried parsley. Similar soups appear on the web. This is my own version of chicken soup with dumplings--tiny ones called spätzle that are nutritious and slightly al dente. My mother, Lorraine, introduced me to this nutritious pasta named after sparrows. It is traditional fare in Alsace-Lorraine, Switzerland and Bavaria. There are many delicious ways to serve this economical ingredient, including with haricots verts and bacon, with walnut pesto, and with cinnamon, nutmeg and butter.

Pineapple Upside-Down Cake

White or vanilla cake batter is prepared then poured over butter, brown sugar and pineapple rings in an oval Le Creuset baking-dish, and baked at 350° for forty-five minutes.  After fifteen minutes of cooling, an oval platter is placed on top of the pineapple upside-down cake, then turned over and the cake is elegantly inverted to reveal the delicious topping. The pineapple creates steam that makes the cake rise a little higher than usual, and imparts a lovely texture to this classic American dessert.

Elegant Low-Carb Burgers


A cast iron skillet such as this one by Le Creuset (the most durable and worth the cost) will give your ground beef burgers a perfect finish.
Below: hot pickled peppers are placed on cooked hamburger patty, which will be topped with Irish Ballyshannon Cheddar cheese and broiled.

The Le Creuset skillet can take the highest oven-temperatures, and withstands broiling.

Cheeseburgers are placed on beds of shredded lettuce and a sauce of mayonnaise with finely chopped dill pickles.

M-J's Method for Making Pasta all'Uovo



I use a wooden clothes-drying rack when I make pasta all'uovo (egg noodles).  My recipe: four cups of flour, five medium eggs, one teaspoon of salt and 1/3 cup of water, all mixed together into a stiff dough. I employ a Kitchenaid pasta-rolling attachment and a Kitchenaid pasta cutting-wheel to create these fettuccine-style strips. When they are sufficiently dry, the noodles are boiled for two minutes in salted water or diluted chicken-stock. Any excess pasta is stored in a tall container. ~~Copyright M-J de Mesterton ©2014

ParabensParabens are very frequently  used as preservatives in soaps and cosmetics. Author Biography

Uffe Ravnskov was born 1934 in Copenhagen, Denmark. He graduated in 1961 from the University of Copenhagen with an M.D, but has worked most of his time as a clinician and a researcher in Sweden, where he got his PhD from the University of Lund. He has published more than 100 papers and letters critical of the cholesterol campaign; most of them in major medical journals. Honoured by the Skrabanek Award 1999 given by Trinity College of Dublin, Ireland for original contributions in the field of medical skepticism, and by the 2007 Leo-Huss-Walin Prize for Independent Thinking in Natural Sciences And Medicine. He is a member of the editorial board of two medical journals and is the creator and spokesman of THINCS, The International Network of Cholesterol Skeptics (www.thincs.org), an organization that includes more than 100 researchers and other university graduates from all over the world.
